elysian coffee - perfect cup of clover

elysian coffee.
broadway & ash.
(also a location at 5th & burrard.)
they frequently change their coffee selection
(always using freshly roasted beans)
but i believe (don't quote me on this) they use mostly (or a lot of) intelligentsia coffee.

while i normally drink americanos, at elysian i drink their coffee by the cup.
they use a clover & make it to perfection.
if you normally take sugar, you probably won't with this coffee, i promise you.
they also serve tasty goodies made fresh on site.
i'm always drawn to their chocolate cookie with the dusting of icing sugar on top.
i used to make those cookies in high school, so they taste nostalgic to me.
(can things taste nostalgic?)
there's a tap on the bar for water. sparkling or still. your choice.
sparkling water isn't my cup of tea, a bit too fancy for me.
but it might just be your cup of tea. (or water.)

bump n grind: chocolate peanut butter cups + americanos

bump n grind
corner of commercial + venables, vancouver

i've always kind of hated the name of this place, so i never ever went in. but this past summer i tried it out... and honestly i've been missing out. their americanos are pretty great, but the best thing they have is their chocolate peanut butter cups. and what better then to pair chocolate with coffee? not much, i tell you.

so go. go now and eat a chocolate peanut butter cup. with an americano. thank your barista. then come back here and thank me (and my sister who introduced me to them).

kafka's coffee

went to kafka's today with my sister. we had el salvadore syphon coffee and a gluten free hazelnut chocolate cookie. both were tasty.

the syphon coffee is a bit pricey, but it is worth the indulgence once in a while. make sure you watch the barista make it, its a beautiful process. the pour-over coffees are cheaper, but smooth & delicious as well. don't drink this coffee with sugar. please. if you drink it with a sweet treat on the side, however, that's a different story. you should definitely do that.

beautiful space. delicious coffee. friendly staff.

you should go.

coffee drinking + mennonite thrift stores

i don't have enough posts up about coffee. i love the stuff so much, but i guess it sometimes seems so normal & boring & repetitive that i don't bother to take photos.

last month, though, i bought some cheap, new, beautiful mugs, while i was out in manitoba. and new mugs make for more interesting coffee experiences, until the novelty of it wears out anyways.

mennonite thrift stores are THE BEST. where else can you get mugs for ten cents? not at for-profit used stores like Value Village, that's for sure.

if you haven't heard of MCC (mennonite central committee), you should go check them out. if even for their thrift shops, which usually have fantastic finds for low prices. but they also do great work in responding to basic human needs, and working for peace and justice through disaster relief and sustainable community development, etc. and i have a lot of respect for that.

sometimes when we really need 'new' things for our house, my sister and i will borrow a car and drive all the way to abbotsford (50 minute drive in good traffic) just to visit the MCC there. because its that awesome. two of our beautiful couches are from there. $10 each! yeah.

and isn't this a pretty mug? i kinda really like it.

what makes your coffee drinking experience unique from day to day?

finch's

finch's is what i want my home to be like: lots of natural light, beautiful vintage furnishings, simple, and full of good food and people.

located in downtown vancouver on the corner of homer and pender, finch's serves an assortment of sandwiches, salads, teas, coffees. the sandwiches are created with a variety of tasty combinations on sliced baguettes. i've had 2 so far, the baked brie & olive, and the avocado, edam, dijon and roasted walnut (picture below). delicious.

all their sandwiches come with fresh, crisp, red leafy lettuce and are served on brown butcher paper, creating a very aesthetically pleasing eating experience.

their coffee is fair-trade and organic (i think it's saltspring but i'm not too sure), and they have many varieties of loose teas. my sister loves the chocolate chip cookies made in-house (from free-range organic eggs, says one of their black-board signs scripted beautifully and framed in ornate golden frames).

if you live in vancouver and haven't been to finch's yet, you really need to remedy that. keep in mind that they hold short hours. monday to friday 9am-5pm, and saturday 11am to 4pm.

saturday: meringues and other healthy eating habits

its been a HEALTHY eating day for me today. breakfast consisted of toast with peanut butter, a chocolate croissant, and 2 americanos. lunch was decent enough, i had toast with eggs & other rich toppings, like mayo, avocados, cheese... but then i decided to use up the egg whites in my fridge that were leftover from the egg yolks i used in wednesday's eggs benedict. i didn't want them to go to waste, so i decided the best thing to do would be to beat those egg whites to death with about a pound of sugar. i made meringues for the first time ever.

back to my healthy food habits. after snacking on meringues, accompanied by decaf coffee to offset the sweetness, came dinner. which consisted of bean dip and a bag of rice chips. and guess what i had for dessert? yup. meringues. and now it is midnight and i am getting my usual late night pangs of hunger.

i used a recipe from donna hay's cookbook flavours - i think i am in love with donna hay's cookbooks, specifically the photography in her cookbooks. if you ever want to see me drool, the next best thing to putting a plate of delicious food in front of me is to put a donna hay cookbook in my hands. or a jamie oliver cookbook. they both have amazing photographers.

because this was my first time baking meringues, i can't really rate the recipe, or compare it with anything else i've ever tried. it seemed a bit more complicated than it could have been though. i had another recipe that just called for egg whites and castor sugar. simple.

however, this recipe called for:
egg whites (4)
castor sugar - i finely ground my cane sugar into a powder (1 & 1/4 cup)
sifted cornstarch - i used tapioca starch (1 Tablespoon)
vanilla extract (1 teaspoon)
vinegar (1 teaspoon)
seeds from vanilla bean

pre-heat oven to somewhere between 200 F and 250 F. beat egg whites until 'soft peaks' form. you can tell that peaks are forming when you turn off your beater and lift it up, the egg whites will form a small mountain 'peak.' slowly incorporate the sugar (a little bit at a time) until the batter is smooth, and the peaks are no longer 'soft' but 'stiff.' now the recipe said to fold in the rest of the ingredients, but my batter was way too runny still so i beat the heck out of it until the batter became stiffer, and when i rubbed a bit of batter between my fingers, it was sticky and smooth (you shouldn't be able to feel the grains of sugar). dump the batter into a piping bag, pipe shapes onto a parchment lined pan (make sure they are all similar sizes). the baking time is quite long, because it requires low heat (you want them to dry out, but not to burn), so try to get as many on to your baking sheets as possible and stick 2 sheets in the oven at once. just make sure to rotate them a bit during baking. bake for somewhere between 30 minutes and 1 hour. i'm sorry i'm so vague on these instructions - like i said, its my first meringue experience. i kept changing the baking temperature and adding more time to the timer. they were too chewy when they first came out so i just stuck them in for more time. apparently its not a good idea to bake these on a rainy day. it was raining today. that's probably why it took so long. stupid moisture.

i just re-read that last paragraph, and i came to this conclusion: if you want to bake meringues, go find a recipe somewhere else and follow it and use your instincts. i can't give great advice after just making them once and failing to keep track of times and temperatures.

but what i can do.... is show you some more photos! yay photos! i think all that sugar is still coursing through my system.

i have to say, baking is not for the weak. it often requires persistence. i'm quite glad i decided to use my electric beater instead of using my old fashioned hand-held egg beater, because i beat that batter excessively and i still don't think the peaks were as stiff as they should have been.
